Low-Carb Reuben
serves 4
Ingredients
2 C cabbage, sliced thin
1 lb corned beef, 1/4" slice
2 T butter
4 sl Swiss cheese
1 C mayonnaise
1/4 C ketchup
4 t horseradish
1 t hot sauce
1 t Worcestershire sauce
Instructions
Combine the mayonnaise, ketchup, horseradish, hot sauce and Worcestershire sauce, season to taste, then toss with the cabbage.
Break the cabbage by immersing in salted boiling water for 10 seconds, then quickly removing and draining.
Heat the corned beef in a skillet with the butter, top with the cheese, cover and let the cheese melt.
Plate the corned beef and cheese, top with the cabbage, and serve hot.
